Honey Mead

    I have been thinking about it for a while now. After I tasted a friend of mine's vile mead, I thought I have to give it a go and try and improve on that stuff he called mead. Tasted bad. The stuff got contaminated.
    Anyway, back to my mead escapade. So after a few months of research and a general attitude of "Wing it", I set up the following recipe for my mead which I will try as soon as my fermenter frees up, and right before my pilsner.
    The bill:
    4 lbs honey
    1 lb DME
    1 oz of Hallertauer hops
    Citric acid
    Some spice
    Ale yeast (still deciding)
    5 gallons of water
    Aiming for a low abv mead here.

    With 4 pounds of honey and 1 pound of DME and only an ale yeast, it is going to be VERY sweet.
    Busy rebuilding ....

      I am aiming to brew braggot. I will update the recipe as soon as brewday comes. Will do a little more research into the spices and hop choice. I figured 4 parts honey 1 part DME would be a good as any place to start.
      Primary: Bohemian Lager
      Secondary: Bohemian lager/ Ale fusion - Added US-05 to secondary
      Next up: Bohemian Lager
      Then: Bohemian Lager
      And Then: Bohemian Lager
      Conditioning: Chucked Fruit Ale

        So today I brewed a small batch of braggot. Here with what I used;
        0.11 oz Apollo hops (5 minute boil)
        0.7 oz Blackstrap Molasses
        2 oz Amber candi sugar (diy'ed it)
        7 oz Honey
        batch volume of 0.264 gal US
        Primary: Bohemian Lager
        Secondary: Bohemian lager/ Ale fusion - Added US-05 to secondary
        Next up: Bohemian Lager
        Then: Bohemian Lager
        And Then: Bohemian Lager
        Conditioning: Chucked Fruit Ale

                So I had a few minutes free today, so I bottled my braggot I brewed back in June. The braggot still tasted sweet. So hopefully the taste develops into a nice blend between sweetness and hop character.

                  Brennen,

                  My mate and I brewed 8 batches of different blends of mead over December, I will keep you posted over the next 12 months to see how they turn out.

                      An update to my mead adventure. It did not turn out as I expected. Have one more bottle left and will try and get a descriptive post going.

                          Best of luck with that mead, assuming it is not a little too late. I do apologise for the belated
                          .................................................. ........response, just got my home internet going again.
                          The problem was the low quantity brewing. I did not have the correct scale to properly weigh out my ingredients. I did just brew a litre.


                          PS. On a side note. I never did get around to properly taste the other bottle of mead, it met the drain system faster and with more enthusiasm then when it met my lips.
