Ginger Beer

From Kook en Geniet (12 ed, 15 print), p 180
4.5 liter water
28g ginger root
500 ml (2 cups) sugar
15 ml (1 Tbs) active dry yeast or one block of compressed yeast
5 ml or 1 tsp sugar
250 ml ( 1 cup) lukewarm water
1 lemon
Boil water and add bruised ginger root and sugar
Mix until sugar is dissolved
Pour into an enamel jug or bucket
Let cool to lukewarm
Mix dry yeast with 5 ml sugar in lukewarm water
Leave in a warm stop for 5 to 10 minutes, until kreuzening starts
Add yeast mix to lukewarm jug/bucket
Slice lemon into thin slices and add to bucket
Leave for 24 hours
Siphon the mixture through a damp cloth
Pour into bottles and seal.
Ready to use in a day or two.

I would love to have a hard ice tea on tap. Something like Smack Republic's ice tea.
Have been playing around with the idea to cold steep tea in 10L of water and add enough sugar to bump it to about 3-4%abv. US-05 yeast. Drop in some lemon juice and lemons when primary fermentation is done. Rack off yeast and keg with sugar or honey to back sweeten.

I love a good ginger ale and ginger brandy on a hot summer day.... Chucking that in a keg might be a good idea.
Or maybe making a light ginger ale beer, and mix that with ginger brandy in the keg and pouring it over sliced lemons might give you a nice drink for December.
