Today (yesterday) I learnt that using old hops can screw with your beer.
The beer (an APA) has almost no hop flavours or aromas.
The hops were a gift, but the original owner did not freeze the hops, nor were they stored in airtight containers. I did not take this into consideration and just happily added it to my library.... Stupid me!
Now I have a strangely malty APA.

I learned, with time, certain beer styles MUST age.
I brewed an abbey ale which was terribly astringent and alcoholic after a month in bottles.
After another 5 months it has settled into a bloody fine beer.
Pity it's only a 1g batch. I'd love to leave it for another 12-24 months.Give a man a beer, waste an hour. Teach a man to brew, and waste a lifetime!
